A butterfly cut is not a cut of meat but a way of presenting a cut. Example: a medalion is cut 1 inch thick, then almost cut in half with only a small amount of meat holding it together (the butterfly wing appearance) so you have 1/2 inch thick slices. These cook faster and look like a larger amount of meat.
