Sue Is correct. The two main jerky preservatives, sodium nitrate and sodium nitrite are regarded as drugs currently under US FDA regulation. the FDA will not allow them to be used in game meat. They can not be used EXCEPT for their specificaly elaborated use under USDA juridiction as dictated by the FDA under the 1940's law in beef, pork, lamb, horse and a few other meats. the ostrich people managed to get their meat under the 1940 law via congressional amendment.

According to the lasw, the use of +3% of beef or pork in a product allows USDA juristiction rather than FDA, hence the use of a circle USDA bug on the processed product and the preservatives.
