Elk Burger Alternative

    3 1/3 pound elk burgers
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 teaspoons canola oil
    1 egg
    2 tablespoons water
    1/2 cup dry bread crumbs or cracker crumbs
    2 tablespoons grated Parmesan cheese

Season burgers with salt and pepper. Beat egg and water in shallow dish. In second shallow dish combine crumbs and Parmesan cheese. Dip each burger in egg mixture, then in crumb mixture, coating both sides. In large skillet heat oil to medium-hot. Cook each burger about 5-6 minutes each, turning once. Allow to rest 5 minutes in hot plate or drop temperature of skillet to low for 5 minutes to disperse pinkness throughout the burgers.
